Butternut Squash and Carrot Soup
There's nothing
like a good warming soup in these days of super cold weather, you come
home after a long day and want to eat something nurturing but easy to
make, that's when this recipe comes to the rescue, a delicious butternut
squash soup with carrots and some other veggies that will give a lot of
flavor to the mix. What
I love about this recipe is that apart from the butternut squash it
only requires stuff that you often have in your kitchen, and you can
also change the ingredients as you please.
For This Recipe You
Will Need:
-1 Butternut Squash
-2 Big Carrots
-1/2 Red Bell Pepper
-1 Onion
-5 Garlic Cloves
-Salt & pepper
for seasoning
-Coriander to
decorate
1 Start heating 2
liters of water in a large pot until boiling point, add the butternut
Squash, carrots, bell pepper, onion and garlic; all chopped roughly,
(you don’t have to be neat because we are going to blend it at the end)
also add salt and pepper to taste.
When the butternut squash and carrots are tender, turn off the heat.
2 In a
blender, first add the vegetables with 1 or 2 cups of the stock,
depends on how thick you want your soup to be, and repeat until all the
veggies are blended.
Note: you're going
to be left with what it seems like a lot of stock, but don't worry, you
can save it and make a risotto with it, I'll try and post the recipe
soon!
3 Serve and decorate
with some coriander leaves, voilà I told you it was easy !
