Colorful Veggie Sauce Pasta



When I think about comfort food, pasta always comes to my mind; there are SO many ways you can prepare it! 
So for those days when I want to make something delicious but still easy I always end up creating a new recipe with what I have in my kitchen. This recipe is one of those inventions; I love it that much that I prepare it once a month, that's why I thought I would share it with you!
Before we start I want to say that you can also change or add anything you like to this recipe, you can make this with anything you can have in your fridge!



Colorful Veggie Sauce Pasta

For this recipe you will need:
-150g Elbow pasta or any other pasta
-7/8 Broccoli florets
-1 Yellow Zucchini
-1/4 Red Bell Pepper
-1/2 Onion, chopped
-8 Brussels Sprouts
-3 stalks spring onions, finely chopped
-5 Garlic Cloves, crushed
-4 thin jalapeno slices
-1   oz whole peeled tomatoes can
-Salt & pepper to taste

1 Heat a pan with some olive oil, add garlic and onions until they start turning gold then add your veggies.



2 Open your whole peeled tomatoes can and with your hand smash them until you are left with small chunks of tomatoes, after the veggies have been cooking for about 5 min add the tomatoes and let it cook for 20 min.


3 Heat a large pot with water to a boiling point and cook your pasta, when done, add to the veggie sauce and mix until combined.

4 Serve while still hot, add some parmesan cheese if you please.
