Gingerbread Cookies
I know I'm late with
this post but let's say that while still in December everything related to
Christmas is valid!! So I'm going to be quick on this one and just give you the
recipe for this super easy but delicious gingerbread cookies!
For this recipe you
will need:
2 cups brown rice
flour
1 cup oat flour
2 medium eggs
1 cup brown sugar
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground
cinnamon
1/2 tsp ground
ginger
1/2 tsp ground
nutmeg
1/4 baking powder
1/2 coconut oil or
vegetable oil
Zest of an orange
(optional)
1 Preheat your oven
at 180 C
2 In a bowl combine
all of your dry ingredients
3 In a separate bowl
whisk the eggs with the oil
4 Add your liquids
to your dry ingredients and combine them, you could use a mixer or do it by
hand, when done roll the dough into a ball and cover it with plastic wrap film.
Freeze for 20 minutes.
5 Roll the dough
out, using some flour to the surface you are going to work in or wax paper to
avoid your dough from sticking
6 Cut out your
cookies using your cookie cutters, then bake for about 10-15 minutes.
NOTE: If you are
going to decorate them, let them cool down first so the icing won't melt.

you can go and bake some delicious cookies to share with your family or just to
