Spiced Cranberry Loaf Cake
With the coming of
the holidays, I of course, didn’t want to miss out the opportunity to share
some recipes for this occasion! This is a delicious cake perfect for enjoying
with a cup of tea or hot cocoa; it has a lot of what I call "holiday
flavors": spices like cinnamon and ginger are a must this time of the
year, and yes! you will find them in this cake, so let's start shall we ?
For This Recipe You Will Need:
3 cups brown rice
flour
1 cup brown sugar
1 1/2 cup
cranberries
2 large eggs
1/2 cup vegetable
oil or coconut oil
1/4 tsp salt
1 1/2 tsp baking
powder
1 1/4 tsp ground
ginger
1 3/4 tsp ground
cinnamon
2 tsp cocoa powder

1 Preheat your oven
at 180 C
2 In a bowl combine
all of your dry ingredients
3 In a separate bowl
whisk the eggs with the oil
4 Add your liquids
to your dry ingredients and mix them very well, if you feel the texture is a
bit crumbly add a little bit of milk (any kind you want) 1/4 cup at a time
until your mixture is smooth
5 When it's all soft
and smooth add then your cranberries, gently combine them with the mixture
6 In a prepared
baking pan pour your mixture and bake for about 40-45 min or until the top of
the cake looks golden brown, you can also insert a knife in the middle and if
it comes out clear it's done.
7 When completely
baked, take it out of the oven and let it cool before serving, if you like, you
can have it with ice cream, whip cream or anything you think goes great with
it, it's up to you.
