1 Base 2 Flavor Oat Cookies (Lemon&Chocolate)


 
It's been quite a while since I shared a recipe here on the blog. And what a best way to make a comeback that with a delicious sweet treat?? This is one of my favorite cookie recipes, because not only they are super easy  and delicious, the best part is that you can make them as healthy or non-healthy as you want, it's your choice. Do what makes you happy and never feel guilty for what you eat!

With the base of these cookies you can create tons of different flavors or you could leave it like that and have the original, simple but delicious flavor. Today I'm going to share 2 of my favorites, lemon and chocolate. These cookies are full of fiber and the healthy version is perfect if you are controlling what you eat, you just have to be careful and not eat all of them in one day (Fight the temptation, or not)


 You will need:

(Makes 12 medium size cookies)

Base:
2 1/2 Oat Flour
1 Tsp Baking Powder
1 Tsp Vanilla Extract
1/2 cup coconut oil or butter (for a non-so healthy option haha)
1/2 tsp salt
1/2 cup coconut sugar or brown sugar
2 eggs

Flavors:

1 tbsp cacao powder
Zest of 1 lemon
Juices of 1/2 lemon

1 In a mixing bowl combine dry ingredients.

2 In a separated bowl mix wet ingredients.

3 Incorporate wet ingredients into dry ingredients and mix well. This is your base for your cookies, you could make them without adding anything else but this is a 2 flavor recipes so… Divide the mixture in 2 equal parts.

4 For the lemon flavor add the zest of the lemon and the juice and mix well

5 For the chocolate flavor add the cacao powder and if you fancy some chocolate bits or chips

6 Wet your fingers and start forming small balls and flattening them on a baking tray lined with parchment paper

7 Bake at 180 C for about 20 min or until golden brown.
