Cassava Bread (GF)

I'm just going to start by saying that this is the easiest bread recipe you'll find. I so love this recipe, I make it at least once a week, and how wouldn't I, you only need 3 ingredients, YES you read just fine 3!

This is a gluten free recipe and it can be dairy free as well if you leave out the cheese or substitute with a Dairy free cheese.

I just want to add that even if is called bread don’t expect a bready texture, this are soft/creamy buns, but what I do guarantee is that they are so delicious you won't be eating just one.

 You will need: Makes 8

2 cup of cassava puree

1 cup of grated cheese

3 tbsp cornstarch

1 tbsp Salt

1. Peel your cassava and cut in medium size pieces. In a pot of boiling water with salt cook your cassava until soft (really soft, you'll puree this)
2. When your cassava is cooked, remove the vein (it's on the middle, like a hard string). Puree your cassava with a fork or a potato masher. Don't do it on a food processor or blender because we don't want a very smooth puree, we want little pieces of cassava.
3. Add the cheese and cornstarch and work it until you have a smooth dough. I do it with my hands that way I have a smoother dough. This dough is sticky so don't worry, stop when is smooth.
4. Line a baking tray with parchment paper. Add some oil to your hands so you can work the dough easily. Make some balls, the size you want your bread to be, mine are usually 7cm of diameter or so. When done, give them an egg wash or coat with butter to get that golden brown color on the top.
5. Bake at 180° C for about 25 to 30 minutes or until golden brown. You can eat out of the oven if you want, they are better hot, just be careful.
