Sweet Potato Gnocchi
If homemade pasta
doesn't scream comfort food, then I don't know what does it. Not to mention how
relaxing that hour can be. So, every time I crave something yummy and
comforting I think of making gnocchi. I'll put some music on and start working
on it, normally with the company of my boyfriend, family and/or friends.
This time I wanted
to step up my game, making these sweet potato gnocchi, and let me tell ya I
LOVE how they turned out. So here it is, hope you enjoy it as much as I do.
Serve 2
You will need:
2 large sweet
potatoes
1 egg
1 cup of flour
3/4 tsp salt
- In a large pot with plenty of salt boil your already peeled sweet potatoes until they are fork-tender. With a potato masher mash them until really soft. Let them cool for a minimum of 30 min.
- Place in a clean surface with a little flour to avoid stickiness. With your hands make a little wheel, pour your egg and the flour. Bring the dough together until all is combined, but do not overwork your dough.
- Divide the dough in 4 equal pieces, roll each part into a rope of about 1/2 inch thick. Start cutting your gnocchis also 1/2 inch thick, you'll end up with little rectangular gnocchis.
- To give them the characteristic shape, use the back of a fork and roll down the gnocchi. Easy peasy.
- Now, you can cook them right away or froze.
- To cook them, bring a large pot of water to boil, add salt if wanted. Add you gnocchis and cook for about 6 to 7 minutes or until you see them float.
