Vegetarian Potstickers (Gyozas)

Fried, steamed, round, half-moon shaped, they are delicious!!! It's something I always ask for as an appetizer when they are in the menu. You can imagine how I felt when I realized that they are actually pretty easy to make and that you only need few ingredients. This recipe is something I normally do on weekends  or when I have friends and family coming over, because everything is better when shared, and it’s a good way to impress your guests. They are the sensation! 

You will need:

For the wrappers: Makes 34

2 cup all-purpose flour

1/2 tsp salt

1/2 cup boiled water. More if necessary.

Corn starch for dusting

For the filing:
2 cups mushrooms chopped

1/2 cup cabbage chopped

3/4 cup spring onion chopped

2 gloves garlic minced

1 inch knob ginger grated

1 tbsp soy sauce

1 tsp sugar

Salt and pepper to taste

For the Wrappers:

1. In a bowl add flour, salt and combine. Add then you water and combine using your hands until the dough comes together. 
2. Sprinkle some corn starch in a clean surface and transfer your dough. Knead it for 5 minutes until it becomes elastic and smooth. If the dough is too dry add a little more of water.
3. Roll the dough into a long log around 3cm in diameter. Slice the dough into 34 pieces of the same size, you could also use the cutting in half method. Cut every piece in half until you have all 34 pieces or the amount of pieces you get.
4. Put some corn starch down your surface, take one piece at a time, roll into a ball and press it to a round disc. Holding your wrapper with your left hand and holding the rolling pin with right rotate the wrapper while rolling out and repeat, rotate and roll, rotate and roll. This way they will have thicker center and thinner edge. Your wrapper should have around 10cm diameter. When done set aside, add some corn starch on every disk so they don't stick together

For the filling:

1. In a pan, heat up 1/2 tablespoon of vegetable oil and stir fry the mushrooms and cabbage with your mince garlic until soft.
2. Transfer to a bowl and add the rest of ingredients, mix until well combined.
3. Assemble your Gyozas. Fill with one heaped teaspoon of filling mixture onto each wrapper. And wrap in a moon shaped form.

Cooking process:

1. In a frying pan heat up 1 tablespoon of vegetable oil. Place your Gyozas bottom down and cook for about 5 min or until the bottom is golden brown. When done add 3/4 cup of water and cover with a lid. They´ll be done when the water has evaporated.
