Pea, Leak and Mint Soup
This is a really
simple yet delicious recipe that I like to make when I need something warm. I'm
a big fan of soups, I find them comforting not only in the cooler months, but
all year around. This recipe if full of goodness and flavor, but the best part is
how quick it is to make, so if you don’t fancy making a big meal, but still
want to eat something comforting and with all the nutrients, this is the recipe
for you.
You will need:
Serves 2
1 package of frozen
peas
2 cups of roughly
chopped leak
1/4 cup of mint
leaves
1/2 onion
2 cloves of garlic
2 cups of veggie
stock
2 cups of water
Salt and pepper to
taste
- Bring to boil in a large pot your veggie stock and water, then reduce to a medium heat.
- Add all your ingredients, cover and cook for 20 minutes, or until your peas are tender.
- When done transfer to a blender, I do it in 2 batches, and blend until you have a smooth/creamy consistency.
- Serve immediately, add some mint leaves to garnish.
