Peach Pie


Who doesn't love a good pie? I've been making pies regularly, I guess because I find them easy to make and a perfect dessert/snack for when I'm craving something sweet. This one came up because I had like 10 peaches sitting on my fridge and they were starting to get wrinly, best option was , of course, to make a pie. Something I love about this recipe is that the filing its so easy to put together. The crust can give you "a litle more work", but believe me, it's so worth it.



You will need:

For the crust: this is a double crust

2 cups flour
1 tsp salt
1 cup of butter
3 to 4 tbsp of water

For the filing:

4 cups of peaches (pitted and sliced)
1tbsp lemon juice
1/4 cup of sugar
2 tbsp corn starch
1 tsp vanilla extract
1/4 tsp salt 


Method:

For the filing:

In a bowl combine your peaches with the rest of the filling ingredients, give it a mix and put on a side until you need it.

For the crust:

  1. In a bowl and your flour, salt and butter. Using your hands combine all until you start to see that doughy texture, then add your water, 1 spoon at a time.
  2. Transfer your dough to a clean surface with a little bit of flour to avoid stickiness and work your dough until is soft. Then divide your dough in 2 pieces.
  3. Put the dough in the fridge for a minimum of 1 hour before using it.


Ensamble:

  1. Grab one piece of dough and using a rolling pin, roll it out into a 13-inch circle of  5mm thickness.
  2. Using the rolling pin to help you, cover your 9-inch pie mold with the dough and use your hands to adjust.
  3. When done add the filling you did before.
  4. Now, take the second piece of dough and do the same thing we did with the other, this time you'll cover your pie with it. Using your rolling pin cut the excess of dough from the borders, rolling it over.
  5. With the leftover dough you can make any decoration you want.
  6. In a small ramekin, beat together 1 egg and 1 tbsp water to make the egg wash and brush the top of your pie generously.
  7. Bake your pie at 180° C for 40 minutes and you see the filling bubbling and the top of the pie turned into a beautiful golden brown color.
