Green Pancakes

This one is for you pancake lovers! I love eating pancakes for breakfast, and have to confess banana pancakes are my favorites. But sometimes I like to change things a little bit and try something new, this one is an adaptation of a recipe one of my best friend gave me and I love it! It's a good way to add your greens in to your breakfast but in a fun way.

The green part on this recipe is interchangeable I'm using spinach here, but you could use chard or kale. *And for the sweetener, here I'm using 1/2 a banana and 1 sachet of stevia, I do this because I love the banana flavor in my pancakes, but if you prefer to leave it out, or you don’t like bananas, then use 2 sachets instead of 1 or you could also use honey or agave.* I have to say, this recipe is super easy to make, you just need a blender and 10 minutes and you'll be done.

You will need:

2 eggs

1 tsp moringa powder

1/2 cup oat flour

1 cup spinach

1/2 banana *

1 sachets of stevia *

2 tbsp coconut milk

1. Put all the ingredients in a blender and blend until smooth
2. In a non-stick pan pour your mixture (1/2 a cup) and cook each side for 2 minutes.
